Reviewed by Mike Lewis Sunday night at the Moosewood Restaurant (in Ithaca, NY) is 'ethnic night'. Each week, diners are offered dishes from a given region, culture or ethnic group. Sometimes, these dishes are expertly prepared by a cook who is skilled in the particular type of cuisine. At other times, the effort is a little more experimental. The results are invariably excellent. This book brings together over 300 of the most successful of the Moosewood Sunday recipes: From the groundnut soups and stews of West Africa to the primo piatto of Italy; the tofu dishes of Japan to the salads of Provence; the Mexican tostada and enchilada to the British high tea. Each section includes between 15 and 30 recipes, carefully chosen to capture the spirit of the country or region in question, but all adapted to reflect American cooking practices and the availability of ingredients. Although aimed mainly at vegetarians, a few of the dishes include fish. This book has greatly expanded my own repertoire of dishes and inspired me to explore the cuisines of different cultures.
